Sweet saffron rice with orangesIngredients

  • Basmati rice 1 bowl
  • Sugar 200 gm
  • 1 big or 2 small oranges
  • Pure ghee (clarified butter) 3 table spoons
  • Cinnamon 4 small pieces, cloves 4
  • Green cardamoms 4
  • Saffron strands (soaked in milk) ¼ teaspoon
  • Grated orange peel (outer orange colored part only) 1 tablespoon
  • Slices of 8-10 almonds and cashew nuts
  • 10-12 raisins, for special occasions silver foil and cherries
  • Edible orange color.


  • Wash the rice and keep aside.
  • Boil 4 cups of water and parboil the washed rice in it on high flame for 12-13 minutes.
  • Drain the rice and pour some cold-water on it.
  • Spread the rice in a big plate and allow it to cool.
  • Mix 1 bowl water into the sugar and boil to make sugar syrup of a consistency little less than 1 strand.
  • Take a pan with thick bottom and heat the ghee, add cloves, cinnamon, cardamoms.
  • Add cooled rice, grated orange peel and sugar syrup.
  • Extract the juice of the orange and add fresh juice to the rice.
  • Add few drops of color, half the dry fruits and cover the pan.
  • Steam for 5 minutes and then put a tawa under the pan of rice.
  • Sprinkle saffron and cook on low flame till done.
  • Take the rice in a serving bowl and garnish with remaining dry fruits, cherries and silver foil.

The sweet saffron rice with oranges is ready to serve.
